Simmiller Catering offer contract catering for Licensed Clubs in New South Wales and Queensland. Simmiller Catering have over 50 years of accumulated experience within the Hospitality Industry.

Paul Miller and Anthony Simmons are two experienced young Chefs who have established themselves as Contract Caterers within the Licensed Club Industry in NSW or Queensland. Both Paul and Anthony come from an operational background together with over 20 years experience in the Licensed Club Industry. They have considerable experience as an Executive/Sous Chefs at a major Clubs in Southern NSW. In addition, Anthony has undertaken operational management roles with Spotless Services Australia and Paul has had valuable experience managing significant restaurants in Victoria.

Paul completed his apprenticeship in a Golf Club in his home town of Tatura in Victoria. After being granted early release from his apprenticeship due to outstanding performance he continued on to run the kitchen at the �Hill Top Golf Club�. (Working for a contract caterer) When this caterer left the club he went to work for leading Melbourne restaurant Attica. After deciding Melbourne life wasn�t for him he progressed onto The Park Lake fine dining restaurant where he was one of the team leaders in the kitchen brigade. Looking for a new adventure Paul did a short stint working in a 5 star London restaurant. He returned to his previous position at The Park Lake.

When offered a position at a leading NSW club he jumped at the opportunity for a change of scene and managed the kitchen for Michael on the Murray, who base themselves out of the club restaurant whilst also doing outside catering for functions (Weddings, engagements, conferences, etc.) Paul is currently expecting his second child with his wife Jessica, who has eight years experience in the front of house side of catering.

Anthony's Story is not dissimilar having completed his apprenticeship at a Country Hotel before progressing through the ranks at the Cobram Barooga Golf Club. In the space of four years he was able to work up to Executive Chef before he progressed to traveling around Australia spending time in Remote WA and along the Queensland Coast. As Anthony is a Little older (or more experienced) than Paul he decided he needed to Settle into Married life/Family life and began working with a large Catering Company - this has given him operational experience with a worldwide organization.

Paul and Anthony are married to two Sisters who run the front of house. Naturally, it is this connection that founded the Simmiller brand, resulting in some 55 years experience with in the Hospitality Industry. With all this experience we believe that we can take Your Clubs Catering Experience to a new Level.
